Wacky Mac with Garden-Fresh Pesto

Prepare WACKY MAC according to package directions. Drain and return to pot. While WACKY MAC is cooking, place basil, scallions, pine nuts, lemon rind, lemon juice, garlic, salt, pepper and 1/4 cup chicken broth in blender container. Puree, scraping down sides of container. Add remaining 1/4 cup chicken broth and blend at high speed for 30 seconds. Spoon pesto into cooked WACKY MAC and stir well over low heat. Arrange shaved Parmesan cheese on top. Garnish with sun-dried tomato strips.

  • 1 package WACKY MAC
  • 2 cups fresh basil leaves, coarsely chopped
  • 2 large scallions, trimmed and coarsely chopped
  • 2 tablespoons pine nuts
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 2 large garlic cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup reduced-sodium chicken broth
  • 1/3 cup shaved Parmesan cheese
  • 1/4 cup sun-dried tomatoes, cut in thin strips
