Place chicken and shrimp into ziplock bag, or small bowl, and cover with 1/3 cup dressing. Marinate in refrigerator for 30 minutes. In the meantime, prepare WACKY MAC according to package directions. Drain, rinse, and place in mixing bowl. Add avocado, celery and 1/3 cup dressing, and toss gently but well. Thread alternate pieces of chicken and shrimp onto skewers, and grill 3-5 minutes each side or until done. Place WACKY MAC mixture on serving platter, top with skewers of chicken and shrimp, top with pine nuts and parsley, and serve.
